True croissant lamination involves rolling out a butter block between layers of dough in a precise, chilled, multi-fold process. This recipe borrows the spirit of that technique — distinct layers of fat suspended between layers of dough — without demanding a marble slab and a pastry chef’s patience. Instead, frozen butter gets grated directly over the dough during early lamination so the fat gets distributed in thin, even sheets rather than melting into the dough or clumping in pockets. That distinction is the entire difference between a loaf that flakes and a loaf that leaks.

The dough itself runs a bit higher in hydration than a standard sourdough loaf, which keeps the crumb soft and delicate even with all that butter working through it. And because we’re using salted butter and cutting the added salt in half, the flavor stays balanced instead of tasting like a stick of butter got lost in your bread.

I use Kerrygold Pure Irish Butter — a good, high-fat, high-quality butter holds its shape better when frozen and grated, and gives you a richer flavor. Salted is what I recommend for this recipe, since it lets you dial the added salt up front back and keep the overall flavor balanced. If you want to get playful once you’ve made this a few times, Kerrygold’s Garlic & Herb butter and Cinnamon & Sugar butter are both worth experimenting with in place of the plain salted butter — both turn this into a completely different loaf.

Step-by-Step Directions

1. Feed Your Starter the Night Before

Feed your starter at roughly a 1:3:3 ratio (starter : water : flour) the night before you plan to mix your dough in temperatures 70F-73F— something like 25g mature starter, 75g water, and 75g flour, which will comfortably give you the 175g you need by morning with a little to spare. Let it sit out at room temperature overnight.

💡 Pro Tip: If your kitchen temperature is lower, your starter will take much longer to come to peak, or you can feed it a lower ratio, for example 1:2:2, on the other hand if your kitchen is much warmer overnight you may need to up your feeding ratio.

Your starter is at peak and ready to use when the dome on top has leveled off and you can see dimpling across the surface — almost like tiny craters. That visual cue is far more reliable than watching the clock.

2. Mix the Dough

In a glass measuring bowl combine the 375g water, 125g active starter, 500g bread flour, and salt (5g or 10g, depending on your butter). Mix and knead by hand for about 3 minutes, until you have a shaggy but cohesive dough. Cover and let it rest for 1 hour.

💡 Pro Tip: 125g of starter is the amount I use in cooler temperatures, if you live in a warm climate, I would start with 100g of starter instead.

3. First Stretch and Fold (No Butter Yet)

Perform one full set of stretch and folds — grab a side of the dough, stretch it up and over the center, rotate the bowl, and repeat around all four sides. This is just building strength before we introduce any fat. Cover and let the dough rest for 30 minutes.

4. Laminate: The Second Stretch and Fold

This is the step that makes all the difference.

On a lightly water-misted counter, gently stretch your dough out thin but avoiding too much tearing. Take your frozen stick of butter and grate it evenly over the surface.

Fold one side of the dough over the center like folding a letter. Grate a bit more butter over that folded section. Fold the other side over, then grate a little more butter over that side too. Fold the whole thing in half, add a final scattering of butter, then fold once more into a rough square, making sure every bit of grated butter has been used up.

Shape the dough back into a ball and return it to your measuring bowl and flatten it. Note the level of the dough against the side of the bowl right now — you’ll use this as your visual marker for the dough percentage rise.

⚠️ Watch Out: If your kitchen is warm, work quickly through this step. The longer the grated butter sits exposed on the counter, the softer it gets, and soft butter is what leads to greasy pockets instead of clean layers.

5. Three More Stretch and Folds, 40 Minutes Apart

Perform three additional stretch and fold sets, spaced 40 minutes apart. Don’t be surprised if the dough resists stretching much after lamination — that’s completely normal. Gently lift and stretch it with both hands as far as it comfortably goes, fold it in half once, repeat at least once more and return it to the bowl. If your kitchen is extra warm, you may need to pop the dough in the fridge for 30 minutes.

6. Bulk Ferment by Percentage, Not the Clock

Once your folds are finished, cover the dough and let it bulk rise until it’s risen to the right point — watching the dough itself, not a timer. This is the single biggest mistake I see home bakers make with any sourdough loaf, laminated or not: following a set number of hours instead of watching what the dough is actually doing.

The percentage rise you’re looking for depends on your dough’s temperature, not just the air temperature in your kitchen. In my kitchen, temps are between 72F-75F so I aim for 100% rise (double in size).

  • Warm kitchens, dough above 75°F: aim for a 75% rise in volume.
  • Cooler kitchens, dough below 70°F: you may need closer to 125%, more than double slightly.

⚠️ Watch Out: Because you just laminated in cold, frozen butter, your dough temperature is going to drop noticeably — often more than you’d expect. That means bulk fermentation on this loaf will almost always take longer than it does on a plain sourdough loaf. Don’t panic and don’t rush it. Give it the time it needs.

7. Pre-Shape, Rest, and Shape

Once your dough has hit its rise, turn it out and pre-shape it gently into a round. Let it rest, uncovered, for 20–30 minutes. Then shape it with surface tension into its final form and place it seam-side up in a well-floured banneton or proofing bowl.

8. Cold Retard Overnight

Cover the shaped dough and place it in the refrigerator overnight. This slow, cold rise develops flavor and — just as importantly for this particular loaf — keeps the butter firm right up until it hits your hot oven, which is exactly what you want for clean layers.

9. Bake

Preheat your oven with your baking vessel inside. A Dutch oven works beautifully here, but you don’t need one — open baking on a baking steel or stone with a steam pan on a lower rack is a completely valid method and produces a fantastic crust. Line whichever you’re using with a piece of parchment paper before the dough goes in, to catch any butter that renders out during the bake.

Score your loaf, transfer it to your baking vessel, and bake covered first, then uncovered to finish browning — the same rhythm you’d use for a standard sourdough loaf. Because this dough carries so much butter and fat, it typically needs a little longer in the oven than a plain loaf. Don’t rely on color alone: use a probe or instant-read thermometer and pull the loaf when the internal temperature reads 198–205°F. Inclusion loaves like this one consistently need to go a bit higher than the 205°F you might use for a lean dough, so trust the thermometer over your instinct here.

Let it cool for at least an hour before slicing — I know that’s the hardest instruction in this whole post, but a warm laminated loaf will compress under the knife instead of slicing cleanly.

How to Store & Freeze Your Sourdough Croissant Loaf

Room temperature: Store the cooled loaf in a paper bag or loosely wrapped in a clean kitchen towel for up to 2 days. Because of the butter content, it stays soft longer than a lean sourdough loaf, but I don’t recommend a fully sealed plastic bag at room temp — it traps moisture and softens the crust faster than you’ll want.

Refrigerator: I don’t recommend refrigerating this loaf. Cold storage speeds up staling in any sourdough bread, and it can make the buttery layers turn slightly waxy in texture. Room temperature or the freezer are your better options.

Freezer: Slice the loaf before freezing so you can pull out only what you need. Wrap slices tightly in plastic wrap, then place them in a freezer bag with the air pressed out, and freeze for up to 3 months. To thaw, let a slice sit at room temperature for 20–30 minutes, or pop it straight into the toaster from frozen.

Re-crisping: This is where this loaf really shines — a few minutes in the toaster or a 350°F oven brings the layers back to life, crisping the exterior and warming the butter through, almost exactly like reheating a bakery croissant.

Troubleshooting Your Sourdough Croissant Loaf

Problem: Butter leaked out and pooled in the bottom of my baking vessel. Why it happened: The butter was too soft when it went into the dough, or it sat out too long between folds and started to soften before it laminated properly, or the butter was not incorporated during early lamination (2nd stretch & fold). How to fix it: Work quickly during the lamination step, keep your remaining butter in the freezer until the moment you need it, and make sure your kitchen isn’t unusually warm while you’re folding. Lining your baking vessel with parchment will also catch any minor seepage before it hits the pot directly. Do not laminate the butter after bulk rise is done, during shaping, it needs to be laminated early on followed by 3 sets of stretch and folds.

Problem: My crumb came out dense and gummy instead of soft and airy. Why it happened: This is almost always an underproofed loaf, not an overproofed one — the dough temperature drop after lamination catches people off guard, and they pull the dough for shaping before it’s actually reached its rise. How to fix it: Watch the percentage rise, not the clock, and remember that this dough will take noticeably longer to bulk ferment than a plain sourdough loaf because of the cold butter.

Problem: I can’t see distinct layers when I slice into the loaf. Why it happened: The butter likely melted into the dough during folding rather than staying in distinct sheets — usually because it wasn’t frozen hard enough, or the dough sat too long between the lamination fold and baking. How to fix it: Make sure your butter is genuinely frozen solid before grating, and move through the folding step efficiently rather than letting the laminated dough sit out and warm up.

Problem: My loaf browned unevenly, with some spots much darker than others. Why it happened: Uneven browning on a butter-laminated loaf is usually caused by butter rendering out unevenly during the bake and caramelizing faster in those spots. How to fix it: This is largely cosmetic and won’t affect the crumb, but a well-laminated loaf (see the “no visible layers” fix above) will brown more evenly because the butter is staying distributed rather than pooling.

Frequently Asked Questions

Can I use unsalted butter instead of salted butter? Yes. If you switch to unsalted butter, increase your added salt from 5g back up to the full 10g so the flavor doesn’t fall flat.

Can I make a sourdough croissant loaf without a Dutch oven? Absolutely. Open baking on a baking steel or stone with a steam pan on a lower rack works beautifully and produces a great crust — a Dutch oven is convenient, not required.
